Maguey Syrup - "Honey Water"

Maguey Syrup, also known as "Honey Water" or "Agave Nectar" is obtained from the nectar of the Maguey plant. The Maguey plant is an Agave from Mexico. Honey Water is rich in proteins, minerals, vitamins, carbohydrates and salts. It is considered a nutritional complement and a healthy natural sugar substitute appropriate for children and adults.

Agave or Maguey syrup comes from the sap of the maguey cactus, found in Mexico and also used to make tequila. It is about 25% sweeter than sugar, and because of its composition, 90% fructose/10% sucrose, it has a low glycemic index score (40 to 45, which means it affects blood sugar levels less dramatically than regular sugar). It also contains trace minerals such as calcium, iron, magnesium and potassium.

Domenica talks with Dr. Oz about her cookbook Mom-a-licious: Fresh, Fast, Family Food for the Hot Mama in You! Describes agave, as the plant that produces tequila, and also produces a natural sweetener with a low glycemic level. Domenica says agave nectar tastes like something in between honey and maple syrup.

The maguey has a process of growth between 10 to 15 years, once it has reached maturity it is ready to produce honey water. For this reason, the production of honey water is complex. Maguey is also used for the production of ixtle (a valuable fiber) and the membrane of the penca (leaf) is used for the elaboration of mixtotes and barbecue sauces.

Traditional Use




The use of "honey water" is an important product with nutritional and medicinal qualities. The honey is claimed to be helpful in illnesses such as: diabetes, asthma, rheumatism, arthritis, colitis, bronchitis, obesity, indigestion, constipation, gatritis, ulcers, influenza and intestinal disorders. A probable explanation consists on high contents of protein, essential amino acids, carbohydrates, and mineral salts which affect the reinforcing of the immune system. People who suffer from diabetes, due to the incapacity of the organism to absorb sugar, apparently absorb the honey water better since it contains fructose instead of glucose and acts as a source of carbohydrate, therefore providing needed energy.

Nutritional Values

Honey water has high content of proteins, vitamins, amino acids, minerals and salts, which makes it exceptionally nutritious, and an excellent natural sugar substitute.

The maguey syrup is obtained by processing fresh honey water until it reaches a concentrated state. The maguey syrup will not crystalize; it is high in purity and stable composition. It is easy to store as has a long shelf life, aproximately two years and does not lose its natural qualities.

FDA approved, certified organic, kosher, natural and sweet; all excellent reasons to try this natural sweetner as a substitute to sugar.
